Pesto With My Food Processor

I am basically the pesto queen. My family has always loved it and used it often for many dishes. It’s so versatile, so it’s a great staple to have around the house. It can be mixed with different things to give it a unique flavor too. 

Basically it can be made with olive oil, most herbs like basil (which is most common), cilantro, or parsley, almost any kind of nuts, but pine nuts are typically used, and Parmesan cheese. Different greens can be added in like spinach, arugula, or watercress. You can even make avocado pesto. I could go on and on about different varieties, but I’m sure you get the point. 

The secret to making all of these pestos is having a food processor. At one point I was preparing for a decent sized family gathering that was coming up. In just over a week there would be 20 of us having a large sit down dinner. I wanted to make all my pesto up ahead of time so I could get it out of the way. Pesto freezes really well, so that’s another bonus to making it. You can make super large quantities and freeze it. 

Not too long into my work, my food processor stopped working. Of course my initial reaction was to panic. I tried to get it to work again but there was no use. It seemed like the motor on it had fizzled out. It was looking like I’d need to purchase a new one. I had had it for quite a long time, so I couldn’t be too upset.

The ease that it brings is amazing. You can chop the nuts up in the food processor so easily. It also does a wonderful job of finely chopping the herbs, which I absolutely detest doing by hand. The end consistency is virtually perfect. I’m so incredibly happy with this food processor. 

I probably don’t need to say it, but the family gathering went beautifully. I made a great chicken and pasta dish with the pesto and sun dried tomatoes and it was amazing. I had so much pesto left that I was able to send each family home with their own container to have on hand. 

I am so impressed with my new Cuisinart food processor. I literally recommend it to everyone I know. I wouldn’t have been able to make my family gathering go so smoothly without it. I’m so grateful for an easy experience overall.
